Elettaria cardamomum, commonly known as cardamom, is a member of the Zingiberaceae family, related to ginger. Its green pods contain three seeds, which are the source of the spice’s intense, aromatic flavor. Cardamom is one of the world’s most expensive spices, after saffron and vanilla, due to its labor-intensive cultivation. Grown primarily in Guatemala and India, the tall plants flower for eight to nine months, with pods harvested when three-quarters ripe. After harvest, pods are washed and dried, with drying methods determining their final color: green pods are dried in a heated room for one day and night, while white pods are sun-dried for several days.

Cardamom is a key ingredient in Middle Eastern and Scandinavian cuisines. It flavors coffee in Arab traditions, ground meat in Norway, and baked goods in Sweden. Globally, it is combined with cloves and cinnamon in dishes like curries, chai tea blends, and coffee drinks. Whole pods are ideal for long-term storage and can be cracked and ground fresh to maximize flavor. Cardamom oil is also used in pharmaceuticals and as a fragrance in soaps, detergents, perfumes, and body care products.
Available in whole pods, cardamom retains its aroma and flavor longest in this form, with seeds removed as needed for cooking.
Hulled cardamom consists of the cardamom seed, removed from the pod for use in cooking, teas, tinctures, and infusions.
