Soft Red Wheat Berries, Organic is available as a freshly milled flour at Freshly Milled Soft Red Wheat Flour, Organic.

About Our Grains:

All FYBS grains are organic and glyphosate-free, sourced from several vendors across the United States. As soon as the grains arrive at our shop, we remove them from their bags, place them in airtight containers, and flush them with CO2. This eliminates the need to refrigerate or freeze the grains to protect against pesky critters naturally attracted to "real food."

We also offer storage containers to keep your grains pest-free during storage! See storage options below in Related Products. The 1-gallon glass jars typically hold up to 5 lbs, the 2-gallon buckets hold up to 10 lbs, and the 6.5-gallon buckets hold 40–50 lbs of grain. Your lid options for the buckets matter: regular lids are harder for people to open but are less expensive, while Gamma lids are pest-proof, airtight, and easier to access. With your purchase of a container and grains, you also get a free scoop for the grains!

Additionally, we offer small-quantity milling services. If you don’t have a mill and want to try fresh-milled flour with our grains, we can mill your order. If you choose to have your order milled, we will mill the flour on Monday morning and ship it out in the afternoon. Fresh-milled flour starts to oxidize, and the essential amino acids begin breaking down rapidly, so please store it in the freezer until you’re ready to use it. In the freezer, it stays good for 6 months to 1 year.

About This Grain:

Soft Red Wheat Berries are the pastry baker’s dream — a lower-protein wheat (typically 8–10%) that mills into a tender, fine-textured flour ideal for biscuits, pie crusts, cookies, crackers, muffins, and quick breads. Like our Hard Red, the bran carries a warm reddish hue and slightly nutty character, but the soft kernel delivers far less gluten development — so doughs stay tender and crumb stays delicate. Think of it as the “Soft White’s red-bran sibling”: the same baking-soft behavior, with extra color, mineral notes, and a fuller flavor profile.

Key Features:
  • Nutrient-Dense Whole Grain: Bran, germ, and endosperm intact — fiber, B vitamins, iron, and manganese, with the heart-health and digestion benefits of a true whole grain.
  • Organic & Non-GMO: Sourced from sustainable U.S. farms, certified organic and glyphosate-free.
  • Pastry-Soft Protein: Naturally low protein (~8–10%) and low gluten potential — perfect for flaky, tender bakes that hard wheats over-develop.
  • Warm Red Bran, Mellow Flavor: A gentler, mellower flavor than Hard Red, with the same reddish bran color and earthy depth.
  • Multi-Purpose Use: Mill into pastry flour, cook whole for grain bowls and porridges, or sprout for a tender, fresh kick in salads and breakfast jars.
  • Extended Storage: Stored cool, dry, and airtight (ideally ~65°F at 60% humidity), the unmilled berries keep for decades.
Perfect For:
  • Pie crusts, biscuits, scones, cookies, crackers, and other quick-bread/pastry projects.
  • Home millers who want a tender, low-gluten alternative to bread wheat.
  • Pancakes, waffles, and muffins where a soft crumb beats a chewy one.
  • Mixing into a stronger bread flour to add color and tenderize the crumb.
